At the start of the new season, we clear out the beds from last year, washing and brushing each one to remove any roots.
We line the beds with gravel, by hand!
Water is added on top, giving the team a chance to see which spots need to be levelled out – it’s crucial that the crop grows evenly across the beds. It’s highly skilled work that takes years to perfect. Now they are ready for seed...
We now pre-germinate the seed in liquid BEFORE we add it to the beds. The little roots sink down into the gravel and give us a really good coverage – best of all, it’s peat-free & natural.
Once the watercress seedlings are happy and settled into the beds it takes around 5-6 weeks to grow until ready for harvest. We can get several crops from the beds, a regrowth harvest can be ready in just over 3 weeks.
We vacuum cool our harvested watercress which takes it from 20°C to 2°C in roughly 15 minutes. This is the perfect temperature for it to stay healthy while we wrap it, ready to send to its final destination!
We don't use peat compost for a number of reasons; mainly the use of peat is not sustainable, plus we think heating propagation units is a waste of energy.
