Mary Berry's Watercress & Jam Sandwich
Food memories are powerful. A whiff of a childhood favourite can instantly stir your emotions, transporting you to a different time and place. As watercress has such a profound history, we’re pretty sure that it’s a firm favourite for many people, but it wasn’t until Mary Berry visited our Hampshire farm that we discovered this little gem...
While Penny Ede explained how to hand-harvest (the traditional method of harvesting watercress), Mary Berry revealed a snack that she had been enjoying since her childhood: Raspberry Jam and Watercress Sandwiches.
A Mary Berry favourite; the Raspberry Jam & Watercress Sandwich
Just in case there are any sceptics out there, we decided to give it a go ourselves and we can confirm it is delicious; the tartness of the raspberries compliments the peppery watercress perfectly! The crunch of fresh watercress against the sticky sweet conserve creates a delightful treat that we will definitely be including in our Afternoon Teas from now on.
Here’s how we made our Raspberry Jam and Watercress Sandwich:
While you can use your trusted favourites, the ingredients we recommend for this tasty treat are:
A crusty white loaf from Evershot Bakery
A creamy roll of butter from Longman’s
A jar of Raspberry Jam from our friend's at Tiptree
A bunch of our watercress, of course!
