Vegan Watercress & Broccoli Patties

 

These delicious watercress & broccoli patties are absolutely delicious and the perfect way to spice up your lunchbox!

Ingredients:

  • 150g Watercress, finely chopped

  • 75g Broccoli, finely chopped

  • 1 small carrot, grated

  • 1 tsp grated ginger

  • 1 chilli, finely chopped

  • 60g of your favourite flour

  • 50g oats

  • 1 tsp garam masala powder

  • 1/2 tsp turmeric

  • Salt to taste

Method:

  1. Gently bring a non-stick pan to a medium heat

  2. In the meantime, add all ingredients to a bowl and combine (you can add a little water to help the mixture stick together if needed)

  3. Using your hands, make the dough into rough patties - be careful not to make them too thick

  4. Put the patties in the heated pan and cook until the bottom is golden brown, flip and repeat until the patties are cooked through

  5. Serve warm. These are great for dipping!
