Vegan Watercress Dhal

Ingredients:

  • 1 Red Onion, chopped

  • 1 Garlic Clove, minced

  • 1 Piece Ginger (about thumb size), chopped

  • Fresh Chilli (add as much or little as you prefer!), chopped

  • 2 Sweet Potatoes, chopped

  • 250g Red Lentils

  • 600ml Vegetable Stock

  • 80g Watercress

  • 1 tsp Turmeric

  • 1.5 tsp Cumin

  • 4 Spring Onions, chopped

  • Salt to taste

Method:

  1. In a large pan gently fry the red onion in a little vegetable oil until soft, around 10 minutes

  2. Add the chopped chilli, garlic and ginger, cook for a minute

  3. Add the turmeric and cumin, mix thoroughly, and then add the sweet potatoes ensuring they are fully coated in seasoning - salt to taste

  4. Put the lentils in the pan, again coating fully, before adding in the vegetable stock. Bring to the boil and then simmer on a very low heat for around 20 minutes.

  5. When the potatoes and lentils are soft, but not mushy, add the watercress until only just wilted.

  6. Top with chopped spring onions to serve.
